Ingredients for Cooking Vegetarian Borsch

Vegetables and greens:

Cooking Vegetarian Borsch:

Step 1: prepare and cook beets.

First of all, we pour three liters of ordinary running water into a deep pan, put it on medium heat and bring to a boil.
In the meantime, the water begins to boil, thoroughly wash the beets from the sand with a sponge or a kitchen brush.
Is the water boiling? So you can send the beets to cook. We cook the vegetable until almost ready for 40 - 45 minutes, and during this time we prepare the remaining products.

Step 2: prepare the rest of the products.

Peel carrots, onions and potatoes. We wash them with a slice of cabbage and a bunch of dill under cold running water.
Cut the potatoes immediately with medium cubes up to two centimeters in size and put in a bowl with water so that it does not darken before use.

Dry the remaining vegetables with paper kitchen towels, and shake off excess liquid with greens. Then, in turn, lay them on a cutting board and grind.
Cut the onions in medium cubes, rub the carrots on a medium grater, just chop the dill.

We cut cabbage into strips of arbitrary length, up to 5 - 7 millimeters thick.
We lay out the slices in separate bowls. We also put on the kitchen table the remaining products and spices that will be needed for cooking vegetarian borsch.

Step 3: prepare boiled beets.

After the beets are cooked, transfer it with a slotted spoon to a bowl of cold water and cool.
Meanwhile, put on another medium deep saucepan with two liters of clean water on medium heat and bring to a boil.
Then we clear the cooled beets from the peel. Next, we act as desired: either rub the vegetable on a coarse grater, or cut it into strips up to 5 millimeters thick.
We shift the beetroot into a separate bowl and proceed to the next step.

Step 4: prepare a dressing for borsch.

The water in the pan boiled. We spread the chopped potatoes into it, and while it is boiling, we are preparing a dressing for borsch.
We put on a medium heat a pan with two tablespoons of vegetable oil. Across a few minutes dip the onion cubes into the preheated oil and fry them 2 minutesstirring with a kitchen spatula.
Then add carrots to the onion and simmer them together for another three minutes.
Next, spread the tomato paste in the pan, stew it with vegetables for a minute and remove the vegetable dressing from the stove.

Step 5: bring the borscht to full readiness.

After about 10 to 12 minutes, add the cabbage to the almost ready potato and cook them together for another 7 to 8 minutes.

After that, put the chopped beets and vegetable dressing in the pan.

In order to make the dish fragrant and pleasant to taste, put in a borsch a leaf of laurel, salt, sugar, black pepper and chopped dill.

We mix all the components of the dish with a slotted spoon until a homogeneous consistency and cook soup 10 minutes. After that, turn off the stove, cover the pan with a lid and insist borsch 7 to 10 minutes.

Step 6: serve veggie borscht.

Vegetarian borscht is served hot. After cooking, it is insisted under a lid, then, using a ladle, it is poured into deep plates, season each portion with sour cream and served for dinner. Also, very often, along with borsch, plates are placed on the table with thinly sliced ‚Äč‚Äčlard, peeled garlic with donuts or bread. Enjoy a delicious and simple meal!
