Baked pike with vegetables

Ingredients for Cooking Pike Baked with Vegetables

  1. Pike 1 piece (peeled weighing about 1 kilogram)
  2. Onion 2 pieces (large)
  3. Bulgarian pepper 1 piece
  4. Garlic 5-6 cloves
  5. White wine 100 milliliters
  6. Tomato paste (or chopped tomatoes) 600 milliliters
  7. Cherry tomatoes 1 big handful
  8. Fresh parsley 1 bunch
  9. Green onions to taste
  10. Salt to taste
  11. Pepper to taste
  12. Vegetable oil for frying

Cooking pike baked with vegetables:

Step 1: prepare the ingredients.

The pike must be gutted, peeled and washed, and then cut into portioned pieces, removing the tail, head and fins.
The onions must be peeled and then cut into half rings or thin feathers.
Chop the garlic into very small pieces with a knife.
Peppers and peppers, rinse well and cut into thin strips.
Cherry tomatoes for now, just rinse and dry, we will need them later.
Green onions and parsley just as well, just rinse and leave aside, they will go to decorate the finished dish.

Step 2: stew the vegetables.

Heat vegetable oil in a pan, toss onion and garlic into it. Often stirring everything so that the garlic does not burn, fry everything until soft. The onion should become transparent.
Then add the bell pepper in the pan and mix.
Pour the wine into the vegetables and simmer everything, stirring, for 1-2 minutes.
Add salt and ground pepper to taste, pour in tomato paste or tomatoes chopped in a blender and bring everything to a boil over medium heat. Continue stewing the vegetables for a few more minutes until the tomato paste is thick enough.

Step 3: fry the pike.

Season the pike slices with salt and pepper, rubbing the fish with spices on all sides. In a free frying pan, heat the vegetable oil and fry the pike in it until golden brown on both sides.

Step 4: bake a pike with vegetables.

Set the oven to warm up 180 degrees.
Prepare a deep baking tray and pour half of the vegetable marinade (the same that you stewed in the pan) into it. Place the fried slices of pike on top of the vegetables, and then fill them with the remaining marinade.
Put the cherry tomatoes cut in half on top, salt and pepper to taste, and then put everything in the oven on 12-15 minutes.
When the pike is baked, remove the form with it from the oven, decorate the dish with chopped green onions and parsley. Serve hot.

Step 5: serve the pike baked with vegetables.

Pike baked with vegetables turns out to be marvelous, very tasty and bright. As a side dish, rice, potatoes or polenta are suitable. But my homemade fish is good and just with bread, it’s especially cool to dip the crusts in the sauce left on the baking sheet.
