Ingredients for preparing beans with vegetables for the winter

  1. Beans (dry) 1 kilogram
  2. Onion 2 kilograms
  3. 1.5 kg carrots
  4. Bulgarian pepper 3 kilograms
  5. Tomato paste 1 liter
  6. Thyme to taste
  7. Bay leaf to taste

  9. Vegetable oil 500 milliliters
  10. Salt to taste

Cooking beans with vegetables for the winter:

Step 1: prepare the beans.


First boil the beans in water for 20 minutes, then drain the liquid, fill the beans with clean hot water and continue cooking until fully cooked. Do not salt.
After cooking, drain the beans and leave them aside for now. And it is better to simultaneously prepare vegetables at the same time as cooking it.

Step 2: stew the onions with carrots.


Onions need to be peeled and cut into very small cubes. Carrots - peel and grate on a medium grater.
Heat vegetable oil in a large saucepan, put onions and carrots in it and simmer the vegetables until soft, then pour them with a little hot water.
Continue to simmer, stirring until tender.

Step 3: prepare the peppers.


Peppers over an open fire or in the oven bake until black. Then peel their peels, tails and seeds, and chop the remaining pulp with a knife.

Step 4: cook all together.


Add chopped peppers and boiled beans to the pan with onions and carrots. Wait for the water to boil and continue to cook everything together. 30 minutes. If there is little liquid, pour the right amount of hot water into the pan.

After half an hour, pour in the heated tomato paste (slightly diluted with hot water). Add thyme, salt, pepper, bay leaves and grated or crushed garlic.
Cook everything over low heat, stirring constantly, until the dish thickens and becomes a denser consistency.

Step 5: pour the workpiece into banks.


Pour the hot workpiece into small sterile jars. Pour on top of each can 1 tablespoon vegetable oil and close all the covers.

Step 6: pasteurize.


Fold the jars with the workpiece into a pasteurization pot and simmer for 50-60 minutes.
Hot cans need to be wrapped in clothed and left to cool in this form, and then put into storage in a dry, cool dark place.

Step 7: serve beans with vegetables.


Beans with vegetables are very tasty! Even without everything, cold and hot. You can just cook sandwiches with this workpiece or add it to the side dishes.
