Ingredients for making ratatouille on a wire rack

Cooking Ratatouille on a wire rack:

Step 1: Prepare the vegetables.

Rinse the vegetables properly. Peel the seeds, and peel the onions. Then cut all prepared vegetables into large, but thin slices, so that they bake faster, but also do not fall apart.

Mix wine vinegar with olive oil, salt and pepper. Pour the chopped vegetables with the resulting marinade and mix gently.

Step 2: Cook the vegetables on the grill.

Preheat the wire rack and place the vegetables on it. Now you need to set a timer, because for the preparation of each ingredient you need a different amount of time. So the tomatoes will be ready in just 6 minutes, eggplant, peppers and zucchini - through 8 minutes and onions are baked only after 10-11 minutes. In this case, the vegetables need to be turned once with tongs or a spatula so that they are covered with a crispy crust on both sides.

As you cook, remove the baked vegetables from the rack. When everything is ready, you just have to choose what your ratatouille will look like: there will be large slices of vegetables, or you prefer to make something like a salad, or maybe wrap everything in a wheat cake.

Step 3: Serve the ratatouille cooked on a wire rack.

Fold the vegetables baked on the wire rack on a plate, pour them on top with the remaining vinegar and oil marinade, sprinkle with finely chopped basil and grated parmesan. That's all! Now start your meal! Ratatouille is good both as a main dish and as an addition to barbecue or barbecue.
