Eggplant with garlic for the winter


Ingredients for cooking eggplant with garlic for the winter

  1. Eggplant 5 kilograms
  2. Salt 300 grams
  3. Vinegar 9% 500 milliliters
  4. Garlic 200 grams
  5. Bitter pepper 3-4 pods
  6. Vegetable oil 70 grams
  7. Clean water optional

Inventory:

Kitchen knife, deep plate, deep saucer, colander, enameled pan, cutting board, blender or meat grinder, glass jars with lids, a tablespoon, soup ladle, wide funnel.

Cooking eggplant with garlic for the winter:

Step 1: prepare the eggplant.


Rinse the eggplant very thoroughly, use a soft brush or sponge, and cut off the ends. Cut the prepared vegetables into small cubes (1.5 - 2 centimeters) without peeling off the skin.
Pour the chopped eggplant into a deep plate, cover with salt and mix very carefully. Leave to insist for 2 hours at room temperature.

Step 2: stew the eggplants.


Fold eggplant slices in salt for a couple of hours in a colander and rinse several times with running water. Wait until excess moisture drains, and then pour the vegetables into an enameled pan, add clean water and put everything on fire. Let the eggplant boil. Then add the vinegar there and cook more 7-10 minutes.

Step 3: prepare the spices.


While stewing eggplant, prepare a spicy seasoning for the workpiece. To do this, clear the hot peppers from seeds and rinse. Peel the garlic cloves and cut off the tips. Then put both pepper and garlic in a meat grinder or blender and chop. Add vegetable oil and mix well to make a paste.

Step 4: we prepare eggplant with garlic for the winter.


From the stewed eggplants, drain all the water, dropping them briefly into a colander, and then mix the vegetables with hot pepper and garlic in vegetable oil. Arrange the resulting salad in clean, sterilized jars. Roll up or tightly close the lids and cool the workpieces to room temperature. Store eggplant with garlic for the winter in a cool place away from sunlight.
Attention: if in doubt or making preparations for the first time, just in case, before tightly closing the jars of eggplant, pasteurize them in a pot of boiling water for several minutes.

Step 5: serve the eggplant with garlic.


Eggplant with garlic is a spicy snack, as already mentioned at the very beginning, so just put them in a separate saucer and serve on the festive table. And at normal times, you can eat them in the bite with boiled potatoes or fried meat. As a big fan of eggplant, I don’t know the best appetizer or addition to the side dish, and so I immediately roll up more jars of this salad, and still, only one serving remains somehow until the New Year. Therefore, I strongly recommend that you try the eggplant with garlic, suddenly you will like them just like me.
