Ingredients for making Easter cake
- Milk 250 ml
- Yeast 35 g
- Sugar 200 g
- 2 eggs
- Yolk 2 pcs.
- Vanilla sugar 1 tsp
- Salt 1 pinch.
- Flour 800 g
- Margarine 125 g
- Raisins 30 g
- Candied fruits 30 g
- Egg white 2 pcs.
- Icing sugar 200 g
- Lemon juice 1 tbsp. l
- Sprinkling confectionery 1 tbsp. l
- Main ingredients: Milk, Butter, Flour, Yeast dough

Cooking Easter Cake:
Heat milk to our body temperature of 36 degrees, add live yeast, stir.
Add half the sugar, mix, add in parts 1 cup flour, mix well. Cover with a towel and let stand for 30 minutes.
Pour raisins and candied fruit with warm water, let stand for 15 minutes, drain the water, dry on a napkin.
Separate the yolks from the proteins, leave 2 proteins for glaze, put them in the refrigerator.
Add the remaining sugar in 4 yolks and beat.
In two proteins add a pinch of salt and beat in a thin foam.
The rising dough.
Insert the yolks into the dough.
Introduce in portions of protein and a little flour.
Add melted warm margarine, mix. Add vanilla sugar.
Add the flour and continue to knead the dough. Well you knead the dough on the table.
Put the dough in a bowl and cover with a towel and let it come up for 1 hour.
The dough has increased, it needs to be kneaded on a greased tabletop with vegetable oil. Press the dough, put raisins and candied fruits on it, wrap it in and knead. Place so that the candied fruits and raisins are evenly distributed over the dough. Put in a bowl with a towel, let rise for about an hour and a half.
It is advisable to extend the molds with parchment (so the cake will rise evenly, and the hat will not slip on its side), grease with vegetable oil. We cut the dough, make small koloboks and lower them into the mold. To prevent the dough from drying, put a cup of water and cover with a towel.
Bake in a preheated oven to 180 degrees for about 40 minutes. So that the top does not burn, cover with foil.
While baking Easter cake, we cook the icing. Beat the chilled proteins in the foam, gradually add the powdered sugar and continue to beat. Add lemon juice and continue to beat until stable peaks.
Easter cakes are baked, removed from the mold. Dip the hot cake in the icing (so the icing will not fall from the cake).
