Cooking pies with apples:
Step 1: prepare the milk.
Pour whole pasteurized milk into a small stewpan. Put it on medium heat and warm up to 35-40 degrees Celsius. As soon as it reaches the desired temperature, remove from the stove, pour into a deep bowl and move on.
Step 2: prepare the dough.
In a bowl with hot milk, add dry granular yeast and mix everything with a tablespoon to a homogeneous consistency. We cover the dough with a kitchen towel or napkin and put it near the included stove or in any other warm place on 15-20 minutesto get up.
Step 3: prepare margarine and vegetable oil.
In the meantime, we print out a packet with margarine, cut off the desired piece from it with a kitchen knife, divide it into parts and melt it in any convenient way, in the microwave, on a stove or in a double boiler, of course, without covering the last kitchen appliance with a lid. When the fat melts, and its consistency becomes homogeneous, add vegetable oil to it, shake them with a whisk and cool the resulting mixture near the ajar window to room temperature.
Step 4: prepare the flour.
We don’t lose a minute, using a sieve with a fine mesh, we sift into the bowl the right amount of wheat flour, preferably of the highest grade. This step is not avoided, due to it, this ingredient becomes more friable, drier, oxygenated and gets rid of any kind of litter, which is very beneficial for any baking.
Step 5: prepare the eggs with sugar.
Now, one by one with the back of the knife, beat each chicken egg and drop the yolks and proteins into a clean, deep dish. Pour granulated sugar and salt there and beat everything until smooth for 2-3 minutes. For this purpose, you can use the same whisk or a more practical mixer or blender with a special nozzle.
Step 6: prepare and infuse the dough.
As soon as the milk-yeast dough is well infused, combine it with beaten sweet egg mass, as well as melted margarine and vegetable oil. We mix everything well and begin to pour sifted wheat flour into a bowl with these products. We act gradually, adding it in small portions, spoon after spoon, while kneading the dough. When the cutlery stops helping, we continue the process with clean hands. The result should be a slightly sticky, very tender, elastic flour cake mix. We roll it into a ball, send it back to the bowl, cover it with a kitchen towel and set in a warm place, ideally for an hour, but if in a hurry, you can do 30-40 minutes.
Step 7: prepare the oven, baking sheet and apples.
While the dough is infused, we begin to deal with the filling. We wash sweet apples under trickles of cold running water, dry them with paper kitchen towels, put them on a cutting board and cut each fruit into two parts with a sharp kitchen knife. From each half, remove the core with seeds, as well as ponytails and cut the flesh into small cubes from 1 to 1.5 centimeters in size.
Step 8: prepare the filling.
Then we put on a medium heat a deep non-stick pan with a thick bottom and put in it a piece of butter. As soon as it melts, throw the chopped apples into the preheated fat. Fry them around 7-10 minutes or until all the moisture has evaporated, intensively loosening with a wooden or silicone kitchen spatula. Then pour sugar into the pan and cook them together 1-2 minutes.
After that, we fill in the almost finished filling with lemon juice, just squeeze it onto apples, mix everything again, stand on the stove for another couple of minutes and move to the ajar window, let the fruit mass cool to room temperature. Also turn on the oven to preheat in 180 degrees celsius and cover the non-stick baking sheet with a sheet of baking paper or, if it is of high quality, just grease the bottom of this inventory with a thin layer of vegetable oil.
Step 9: form pies with apples.
When the dough is infused, we send it to the countertop, crushed with flour, slightly crushed and cut into 2 equal parts with a metal kitchen spatula.
We knock them into thick bundles or, as they are also called, sausages and divide each transverse into 8-10 servings. In turn, we form balls from them and, using a rolling pin, we roll them into round layers 1-1.5 centimeters thick.
In the middle of the resulting circles, lay out about a tablespoon of apple filling. Then we take one cake in our hands, connect its edges in the form of a boat and tightly pinch the dough, first in the middle, and then from the ends.
Now it all depends on your desire, the cake can be given several forms, for example, oval, square or round. After that, we move the raw flour product with a seam down onto a baking sheet prepared for baking.
In the same way we sculpt the rest of the pies, lay them out at a small distance from each other, put in a warm place on 10-15 minutesto come up, and proceed to the next, almost final step.
Step 10: bake pies with apples.
We break 1 chicken egg into the bowl, shake it slightly with a table fork until smooth, and using a baking brush, grease the resulting mass with the raised pies. Now we check the oven, if it has warmed up to the desired temperature, we send there a still raw dessert on the middle rack and bake it for 20-25 minutes or until golden brown and brown.

Step 11: serve the pies with apples.
Pies with apples are served warm on a large flat dish or in portions on plates. If desired, before serving, you can sprinkle baked goods with powdered sugar.
