Onion soup with salmon


Ingredients for Preparing Salmon Onion Soup

  1. Salmon fillet 450 grams

Cooking onion soup with salmon:

Step 1: Cook the onion and fennel.


Wash and onion and leek, wash, peel if necessary, and chop in small strips. Peel the fennel, remove the top leaves and chop as well. Take a large pan and put it on medium heat, melt the butter at the bottom, add chopped onion, fennel. Fry the vegetables until they are soft.

Step 2: Prepare the potatoes.


While the onions and fennel are being cooked, peel the potatoes and cut them into cubes. Do not make the pieces very small, they should be of medium size, about one centimeter in length and width.

Step 3: Add water and flour.


Add water, I pointed 1,5 liters, but these are not exact proportions, you may need a little less, or a little more water, in order to achieve the desired consistency. Pour flour into the water with fried vegetables. Simmer, stirring with a wooden spoon, 3-4 minutes.
If your soup turns out to be too thick or, on the contrary, too thin, you can add some more flour or water, but do not overdo it.
Add salt and pepper to taste.

Step 4: Add the potatoes.


Now add chopped potatoes. Bring to a boil, but do not let the soup boil, immediately reduce the heat and simmer more 20 minutesuntil the potatoes are cooked.

Step 5: Add Fish.


While the soup is cooking, prepare the salmon. If you do not know how to cut fish, it is better to take the fillet. There should be no bones in the soup. Cut the salmon into small pieces and add to the pan.
Wash the dill and, finely chopped, I do it with kitchen scissors immediately above the pan, send it after the fish.
Add milk and cream. Cook the soup over low heat.
Now you don’t need to cook for a long time, just 5-7 minutes, finely chopped salmon fillet should be cooked. Larger pieces may take longer.

Step 6: Serve the onion soup with salmon.


Serve the prepared salmon and onion soup slightly chilled, it turns out light, so you do not need to load it with cheese, crackers or croutons, just garnish with fresh dill and enjoy.

Recipe Tips:

- Due to the astringent aroma of onions, I would not recommend serving this soup for lunch, it is best to arrange a diet dinner for yourself.

- In some recipes, instead of water, it is recommended to add chicken stock.

- Of course, you can replace the butter with vegetable, but in this case it is better to give preference to olive, rather than sunflower.
